Ingredients
- 2 large eggs
- 2 tbsp carrot, finely grated
- 1 tbsp mushroom, finely grated
- 1 tbsp wholemeal flour
- 1 tbsp milk of choice
- ⅛ tsp ground cumin
- A pinch of black pepper
- ⅛ tsp dried oregano (Optional)
- Butter, for cooking
Method
- Crack the eggs into a bowl. Add the grated carrot, grated mushroom, wholemeal flour, milk, oregano (if using), cumin, and pepper. Whisk well until fully combined.
- Heat a stainless steel pan over high heat, then reduce the heat to medium. Add a small amount of butter and allow it to melt.
- Pour the egg mixture into the pan and spread it evenly. Cover with a lid and cook until the bottom is set.
- Gently flip the egg slice, cover again with the lid, and cook for another 2 minutes, or until the other side is set and lightly golden.
- Remove from the pan and allow it to cool slightly before serving.
- Cut into age-appropriate pieces for toddlers.
