This is a simple, nourishing recipe that has worked really well for my child. These fritters are very soft, making them easy for babies to manage, and they’re quick to prepare using everyday ingredients. I often rely on this meal on busy days because it suits babies and toddlers while still fitting into family meals.
Corn cobs provide natural carbohydrates, fibre, and antioxidants that support energy needs, digestion, and eye health in growing children. Spinach is rich in iron, folate, and vitamins A and C, which research links to healthy growth, immune support, and brain development when offered in appropriate textures.
Eggs are a complete protein source and contain choline, which is important for brain development and learning in babies and toddlers. Wholemeal wheat flour provides fibre, B-vitamins, and minerals that support digestion and steady energy release.
Garlic contains natural compounds studied for their immune-supporting and antimicrobial properties, while cumin has been traditionally used and researched for aiding digestion and reducing gas, making meals gentler on young tummies when used in small amounts.

Ingredients
- 2 corn cobs
- ⅓ cup spinach, lightly packed
- 1 egg
- ⅓ cup wholemeal wheat flour
- 3 tablespoons milk
- 1 medium garlic clove
- ⅛ teaspoon ground cumin
- A pinch of ground black pepper
- 1 tablespoon olive oil, for frying
Equipment
- Medium pot (for boiling corn cobs)
- Colander or sieve (for draining and rinsing)
- Sharp knife (to cut kernels off the cob)
- Cutting board
- Blender or food processor
- Stainless steel frying pan
- Pan lid (to help fritters cook through gently)
- Spoon or tablespoon (for scooping batter)
- Spatula (for flipping fritters)
- Plate or cooling rack (to cool before serving)
Instructions
- Add the corn cobs to a pot of water and bring to a boil. Boil for 5 minutes, then drain and rinse under cold water. Set aside to cool slightly.
- Once cool, carefully cut the corn kernels off the cobs.
- Add the corn kernels, flour, spinach, milk, garlic, cumin, pepper, and egg to a blender or food processor. Blend until you have a thick, well-combined batter.
- Heat a stainless steel pan over medium-high heat. Then put it on low heat and add the olive oil and allow it to heat for a few seconds.
- Scoop 2-3 spoons at a time of the batter into the pan to form small fritters. Put the lids on to let it cook while frying.
- Cook for about 2 minutes, or until the fritters are set and golden on the underside. Flip and put the lid on to cook the other side.
- Remove from the pan and let it cool down before serve them to your little one.
Notes
- These fritters are soft on the inside and great for babies without teeth as well as toddlers.
- For babies and toddlers, pair with yoghurt and soft cucumber from the centre of the cucumber, adjusted to your child’s developmental stage.
