Ingredients
- 3 ripe bananas, mashed
- 1 cup wholemeal self-raising flour
- 60 g butter, melted
- ½ cup desiccated coconut
- 2 eggs
- ½ cup milk
- ¼ cup dark chocolate chips (70% cocoa or higher) (Optional)
Optional topping
- 1 tablespoon oats
- 1 tablespoon desiccated coconut
Instructions
- Preheat the oven to 175°C (fan-forced) or 185°C (Conventional oven).
- Line a small cake tin or a loaf tin with baking parchment.
- Add all the ingredients into a bowl and mix well until fully combined.
- Pour the batter into the prepared tin and smooth the top.
- If using, sprinkle the oats and desiccated coconut over the top for added texture.
- Bake for 35 minutes, or until a skewer inserted into the centre comes out clean.
- Once baked, turn off the oven and open the oven door slightly (about 20 cm). Leave the bread inside for a few minutes to cool gradually and help it keep its shape.
- Remove from the oven and allow to cool completely before slicing.
